Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Wash and cut
Preheat the oven to 100°C. Wash and shred lettuce. Mix it in a bowl with grated cheese.
2 Make salsa
Prepare the salsa: dice tomatoes and half of the onion and mix with chopped coriander and half of the lime juice. Season with salt and pepper.
3 Prep avocado
Halve and de-stone avocado and scrape the flesh into a bowl. Season with salt and pepper. Add the rest of the lime juice and set aside.
4 Marinate beef
Place beef strips to a small bowl. Thinly slice onion and peppers and transfer to another bowl. Drizzle oil into both bowls and season evenly with minced garlic, cumin, coriander, smoked paprika and chilli.
5 Heat and fry
Wrap tortillas in foil and warm up in the oven. Then heat 2 large frying pans over a high heat. Add oil to one, and fry the beef for 4–5 minutes. Season with salt and pepper. Remove from heat and allow to rest.
6 Serve
In the other pan, fry the peppers and onions in oil for 7–8 minutes stirring continuously, until softened a bit and caramelized on the edges. Serve all the toppings separately. Don't forget the sour cream!
