Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Boil spinach

1 Boil spinach

Bring a pot of water to a boil and oil add chopped spinach. Boil for 1 minute. Drain well.
Mix batter

2 Mix batter

Pour milk to a blender. Add eggs, flour, spinach and salt. Mix until smooth and fluffy. You can also use a bowl and a mixer. Let the batter sit for about 10 minutes.
Make tomato salad

3 Make tomato salad

Cut tomatoes to very small cubes. Combine with shredded basil leaves, olive oil, salt and black pepper.
Prep and fry veggies

4 Prep and fry veggies

Cut red peppers to cubes. Halve leeks and rinse between the layers. Slice thinly. Heat oil in a pan over medium-high heat and fry leeks and bell peppers for 5 minutes.
Add and cook

Stir in the drained and rinsed corn kernels and cream cheese. Season with paprika, salt and pepper. Remove from the pan and keep hot under cover or foil.
Fry crepes

6 Fry crepes

Reduce the heat to medium and add oil. Pour a small ladle of batter to the pan. Turn the pan so that the batter spreads to an even, thin layer. Fry for for about 3 minutes, then flip with a wide spatula. Fry the other side for 2–3 minutes. Repeat with the rest of the crepes. Serve the crepes with the filling and the tomato salad.
