Chicken and Feta Fusilli

Instructions

1 Boil pasta

Bring a large pot of salted water to the boil. Once boiling, add the pasta and cook for 8-10 minutes until 'al dente' or cooked to your liking. Drain and keep warm.

2 Prepare and fry onion

Meanwhile, peel and finely chop onion. Peel and crush garlic. Heat oil in a pan over medium-low heat. Once hot, add the onion and garlic and cook for 4-5 min or until the onion is softened.

3 Add chicken

Chop chicken breast into bite-size pieces. Add the chicken to the pan and fry for 3-4 min. Add cherry tomatoes and cook for 2-3 min further. Add chopped tomatoes, oregano, salt and pepper. Simmer for a final 5 min (see pro tip). Meanwhile, chop the basil roughly.

4 Serve

Add the drained pasta to the tomato sauce and crumble in the feta cheese. Garnish with chopped basil and a generous grind of black pepper.

Tips for fussy eaters

Reserve the fresh basil leaves for the grown-ups.

Pro tip

Simmer the sauce for longer for extra flavour. Add a splash of water and a pinch of sugar and stew for a minimum of 30 minutes.
