Instructions

1 Prep vegetables

Peel carrots and rinse peppers. Dice. Peel and grate garlic and ginger. Finely slice red chilli.

2 Fry vegetables

Heat oil and sesame oil in a large frying pan over medium-high heat. Fry carrots and pepper for 4-5 minutes. Add minced chicken, garlic and ginger, and fry for about 6 minutes. Add the chilli in the pan (remove seeds if you don’t like the heat) and season with black pepper.

3 Make sauce

Mix together the soy and hoisin sauces.

4 Serve

Add the sauce to the pan, then remove from the heat and sprinkle with chopped coriander. Carefully separate the lettuce leaves and keep them whole. Lay the leaves on a large platter. Spoon in the chicken mixture. Sprinkle with chopped peanuts. Serve with lime wedges.

Tips for fussy eaters

Leave out the chilli!

Dice means to chop very small.
