Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Prep

Peel and roughly chop the onion and garlic. Chop the peppers into small chunks. Drain the corn.
Fry pepper

2 Fry pepper

Heat a pot over a medium high-heat with a drizzle of oil. Once hot, add the peppers with a pinch of salt and fry for 4 min or until starting to soften. Transfer to a plate, reserve the pot.
Start soup

3 Start soup

Return the pot to a medium heat, with a drizzle of oil. Once hot, add the onions and fry for 5 min, stirring occasionally. Add the garlic, tomato paste, fajita seasoning (spicy!), chipotle powder (spicy!) smoked paprika and cumin powder. Cook for 1 min.
Simmer

4 Simmer

Add the chopped tomatoes, agave, measured water, stock cube, oregano, and half of the nachos. Simmer for 5 min. Transfer the soup to a food processor and blend until smooth. Return the soup to the pot and add the peppers and corn. Simmer for 2 min further. Add a splash of water if too thick - this is your soup.
Serve

5 Serve

Serve the soup in deep bowls. Finish with a squeeze of lime juice. Top with the cheddar cheese, a dollop of sour cream, the remaining nachos and a sprinkling of fresh coriander leaves.
