Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Preheat the oven to 200°C/180°C fan. Drain and rinse the chickpeas. Slice the zucchini into rounds. Add the chicken and zucchini to a bowl and mix with the harissapaste(spicy!), pomegranate molasses, soy sauce, a drizzle of oliveoil, the honey and a generous pinch of salt.
2 Bake chicken
Add the chickpeas to 1 or 2 baking trays. Drizzle with oil and sprinkle with the smokedpaprikapowder. Add the zucchini and chickenbreast. Bake for 10 min.
3 Zaatar flatbreads
Meanwhile, combine the zaatar, oil and salt in a small bowl. Spread 4 Arabic breads with the zaatar mixture. Sprinkle with the mozzarella. Once the chicken has been in the oven for 10 min, add the zaatar breads to a second baking tray and bake the lot for 10 min further.
4 Serve
Serve the traybake alongside the cheesy zaatar breads. Garnish with the parsley leaves and serve with a dollop of labneh.
