Loaded Beef Nachos with Jalopeno

Instructions

1 Fry meat mixture

Preheat the oven to 200°C. Peel and chop onion and garlic. Heat oil in a large pan and fry onion for 2-3 minutes. Add beef mince. Fry for 5-6 minutes until nicely browned. Add garlic, taco seasoning, drained and rinsed black beans, water and salt. Simmer for 5 minutes.

2 Bake

Line a large oven tray with baking paper. Add half the nachos and top with beef and bean mixture, half of the cheese and half of the jalapeno slices. Repeat one more layer. Bake in the oven for 15 minutes or until the cheese has nicely melted.

3 Slice and dice

Meanwhile, dice tomato and avocado. Slice spring onions thinly.

4 Finish

Once the cheese has melted, remove the nachos from the oven and top with tomato, avocado and spring onions. Finish with sour cream and spicy sriracha sauce.

Tips for fussy eaters

Keep the jalapenos and the sriracha on the side.
