Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep veggies
Cut eggplant and green bell pepper to small cubes. Peel and mince shallots and garlic.
2 Fry and simmer
Heat oil in a pot. Fry eggplant for 6 minutes. Add garlic and fry for 2 minutes. Add chopped tomatoes and basil. Simmer for 10 minutes until eggplant is soft.
3 Fry meat
Meanwhile, heat oil in a pan and fry meat for 5 minutes. Add onion and green bell pepper, fry for another 5 minutes. Season with salt, pepper and chilli flakes.
4 Combine
Once the beef is done, pour in the pan with eggplant. Mix everything together and check the seasoning. Add fresh basil leaves and grated mozzarella just before serving.
