Before you start

Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Prep salad

1 Prep salad

Peel and grate the carrot. Grate the zucchini. Chop the fresh coriander. Place all three in a bowl.
Fry beef

2 Fry beef

Heat a pan over a high heat with a drizzle of vegetable oil. Once hot, add the beef mince and fry for 5-7 min or until browned and starting to crisp.

Add the garlic paste, tomato paste, taco seasoning (spicy!) and measured water. Reduce the heat to low and cook for 2-3 min. Sprinkle with the cheese and remove from the heat. Cover and set aside until serving.
Dress salad

4 Dress salad

Season the carrot and zucchini salad with a generous squeeze of lime juice and a drizzle of olive oil. Toss.
Serve

5 Serve

Split the burger buns (see pro tip!). Load them with the beef mix, sour cream and jalapeno slices (spicy!). Serve the carrot salad to the side.
