Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep vegetables
Peel and chop brown onion and mince garlic. Heat oil in a pan over medium-high heat and fry onion for 5 minutes. Add garlic and fry for 2 minutes. Transfer to a pot.
2 Make tomato sauce
Add tomato paste, red vinegar and brown sugar and cook for 2 minutes. Add chopped tomatoes, water and dried basil. Once boiling, reduce heat to low and cook, covered, for 30 minutes (see pro tip). Season with salt and black pepper.
3 Boil spaghetti
Meanwhile, bring large pot of salted water to the boil. Once boiling, add spaghetti. Cook for 8-10 minutes until 'al dente' or until cooked to your liking.
4 Make meatballs
With oiled hands, break up the vegan burger patties into 12 pieces. Shape each piece into meatball.
5 Fry meatballs
Heat large non-stick pan over medium heat with drizzle of olive oil. Once hot, add meatballs and fry for 5 min or until starting to brown all over. Serve meatballs and sauce over spaghetti and garnish with fresh basil. (You can leave the meatballs slightly "medium" in the middle for extra juiciness)
