Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Prep

1 Prep

  • Preheat the oven to 220°C/ 200°C (fan).
  • Chop the tomatoes into wedges.
  • Peel and cut the red onion into wedges.
  • Chop the potatoes (skin on) into wedges.
  • Deseed the peppers and chop into bite-sized pieces.
  • Cut the chicken into bite-sized chunks.
Mix seasoning

2 Mix seasoning

  • In a small bowl, combine the garlic powder, lemon pepper seasoning and oregano.
  • This is your seasoning mix.
Roast veg

3 Roast veg

  • Line a baking tray with parchment paper.
  • Lay down the potato wedges.
  • Drizzle over some oil, half of the seasoning mix (save the rest for the chicken), a pinch of salt and pepper.
  • Toss to coat.
  • Bake in the oven for 20 min until partially cooked.
  • After 20 min, scatter around the tomatoes, onions and peppers.
  • Bake further for 10-15 min until charred and potatoes are cooked through.
Prep salad

4 Prep salad

  • Meanwhile, chop the romaine lettuce into bite-sized pieces.
  • Cut the lemon into wedges.
  • Chop the kalamata olives in half.
  • Pick and finely chop the mint.
  • Peel and mince (or grate) the garlic.
  • In a bowl, mix the yogurt, mint, garlic and a squeeze of lemon juice until combined.
Fry chicken

5 Fry chicken

  • Heat a large pan over medium-high heat with a drizzle of oil.
  • Season the chicken with the remaining seasoning mix, salt and pepper.
  • Fry the chicken for 4-5 min until cooked through.
