Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Preheat the oven to 220°C/ 200°C (fan).
Chop the tomatoes into wedges.
Peel and cut the redonion into wedges.
Chop the potatoes (skin on) into wedges.
Deseed the peppers and chop into bite-sized pieces.
Cut the chicken into bite-sized chunks.
2 Mix seasoning
In a small bowl, combine the garlicpowder, lemonpepperseasoning and oregano.
This is your seasoningmix.
3 Roast veg
Line a baking tray with parchment paper.
Lay down the potato wedges.
Drizzle over some oil, half of the seasoning mix (save the rest for the chicken), a pinch of salt and pepper.
Toss to coat.
Bake in the oven for 20 min until partially cooked.
After 20 min, scatter around the tomatoes, onions and peppers.
Bake further for 10-15 min until charred and potatoes are cooked through.
4 Prep salad
Meanwhile, chop the romainelettuce into bite-sized pieces.
Cut the lemon into wedges.
Chop the kalamataolives in half.
Pick and finely chop the mint.
Peel and mince (or grate) the garlic.
In a bowl, mix the yogurt, mint, garlic and a squeeze of lemonjuice until combined.
5 Fry chicken
Heat a large pan over medium-high heat with a drizzle of oil.
Season the chicken with the remaining seasoningmix, salt and pepper.
Fry the chicken for 4-5 min until cooked through.
6 Serve
