Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Preheat the oven to 185°C/165°C fan.
Line a muffintray with the 8muffincups provided.
In a microwavable bowl, melt the butter.
Zest, cut and juice the orange.
Peel and cut the apples into very small cubes.
Tip!For a softer texture, grate the apple instead of cutting it into cubes!
2 Prep wet and dry
In a large bowl, mix together the melted butter and brownsugar, ensuring no large clumps.
In the same bowl, mix in the orangejuice and orangezest till combined.
In a separate large bowl, combine the flour, oats, bakingpowder, cinnamon and a pinch of salt.
3 Mix batter
To the butter mixture, mix in the egg, vanillaessence and yogurt till combined.
Add the dry ingredients to the butter mixture.
Using a spoon or spatula, gently mix until combined.
Fold in the gratedcarrots and apples.
Tip!Be careful not to over-mix the batter as this will result in a tough, bread-like muffin.
4 Bake
Evenly divide the muffin batter between the muffincups.
Top with the pumpkinseeds.
Bake in the centre of the oven for 20-25 min or until a skewer inserted into the centre of a muffin comes out clean.
Allow to cool in the muffintray for 4-5 min before removing.
5 Serve
Serve the Rise and Shine Muffins.
Tip!Once the Muffins have fully cooled, store in an airtight container or ziplock bag at room temperature for up to 3 days.
