Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Prep

1 Prep

  • Preheat the oven to 185°C/165°C fan.
  • Line a muffin tray with the 8 muffin cups provided.
  • In a microwavable bowl, melt the butter.
  • Zest, cut and juice the orange.
  • Peel and cut the apples into very small cubes.
Tip! For a softer texture, grate the apple instead of cutting it into cubes!

  • In a large bowl, mix together the melted butter and brown sugar, ensuring no large clumps.
  • In the same bowl, mix in the orange juice and orange zest till combined.
  • In a separate large bowl, combine the flour, oats, baking powder, cinnamon and a pinch of salt.
Mix batter

3 Mix batter

  • To the butter mixture, mix in the egg, vanilla essence and yogurt till combined.
  • Add the dry ingredients to the butter mixture.
  • Using a spoon or spatula, gently mix until combined.
  • Fold in the grated carrots and apples.
Tip! Be careful not to over-mix the batter as this will result in a tough, bread-like muffin.
Bake

4 Bake

  • Evenly divide the muffin batter between the muffin cups.
  • Top with the pumpkin seeds.
  • Bake in the centre of the oven for 20-25 min or until a skewer inserted into the centre of a muffin comes out clean.
  • Allow to cool in the muffin tray for 4-5 min before removing.
Serve

5 Serve

  • Serve the Rise and Shine Muffins.
Tip! Once the Muffins have fully cooled, store in an airtight container or ziplock bag at room temperature for up to 3 days.
