Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Bring a kettle to a boil.
Dissolve 0.5 chickenstockcube in the water, add the saffronsplash, and set aside.
Rinse and drain the freekeh.
Peel and finely chop the brown onion.
2 Marinate chicken
In a bowl combine the chicken with oliveoil, arabicmixmasala, turmericpowder, salt, and blackpepper.
Set aside to marinate.
Tip!Although spices are mild, if cooking for kids, leave a portion of chicken plain without the Arabic spices, and slice into strips or cubes.
3 Fry chicken
In a large non-stick pot over medium high heat, add a small drizzle of oil and fry the almonds until lightly browned.
Transfer to a small bowl.
To the same pot, add the chicken and sear for 1 min on each side until browned (the chicken doesn't need to be fully cooked at this stage).
Set the chicken aside on a plate.
Tip!If cooking for kids, fully cook the plain chicken strips or cubes first and set aside.
4 Cook freekeh
To the same pot, add another drizzle of oliveoil.
Fry the onions, cinnamon stick and cardamom pods for 2-3 min.
Add the gingergarlicpaste, freekeh, and cook for 1 min further.
Add the stock. Bring to a boil.
Then lower heat to medium low. Lay the chicken on top of the freekeh and cover.
Cook for 20-25 min until the freekeh has absorbed most of the liquid and is cooked through.
Set aside to rest.
Tip!The texture of freekeh will resemble that of brown rice with a slight chew to it.
5 Make cucumber yogurt
Meanwhile, slice the lemon into wedges.
Pick and tear the mint, reserving some for garnish.
Finely chop the cucumber.
Chop the cherrytomatoes into halves or quarters.
In a bowl, combine the yogurt, mint, cucumber, a squeeze of lemon, and a pinch of salt.
Tip!If cooking for kids, reserve some plain yogurt, cucumber, and tomatoes to the side.
6 Serve
Serve the Baharat Spiced Chicken and Freekeh Pilaf with the CucumberYogurt Salad and cherrytomatoes to the side.
Garnish with the fried almonds and reserved mint.
Tip!If cooking for kids, serve the chicken, freekeh, yogurt, tomatoes, and cucumber seperately. Serve the fried almonds as sprinkles to the side.
