Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Mix dry ingredients

1 Mix dry ingredients

  • Preheat oven to 180°C/160° fan.
  • Line an 20x20 cm baking dish with baking paper.
  • In a medium bowl, combine the oats, baking powder, cinnamon powder and a pinch of salt.
Mix wet ingredients

2 Mix wet ingredients

  • In a separate bowl, peel the banana and use a fork to mash until smooth.
  • Add the milk, honey and egg.
  • Mix well.
Tip! If the bananas are not soft enough to mash, place them on a lined baking tray and bake in the oven at 180°C for 10-15 min until the skin is completely brown or black.
Combine

3 Combine

  • Add the dry ingredients to the wet ingredients.
  • Mix well to combine.
  • Allow to sit for 10 min for the oats to settle in the liquid.
Add toppings

4 Add toppings

  • After 10 min, pour oat mixture into the lined baking dish.
  • Top with a handful of blueberries, reserving a few fresh ones for serving (optional).
Bake

5 Bake

  • Bake for 30-35 min until golden brown and a skewer or knife inserted into the centre comes out clean.
  • Allow to cool slightly before cutting.
Serve

6 Serve

  • Top with any reserved blueberries.
  • Serve the Baked Oats with Banana and Fresh Blueberries as an on-the-go snack or add a dollop of your favourite yogurt for breakfast.
Tip! Can be made ahead and stored in an airtight container in the fridge for 1-2 days.
