Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Soften bananas (if necessary)
Preheat oven to 175°C, no fan.
Soften 3 bananas and keep the 4th for topping the loaf.
To soften the bananas in order to mash, place on a baking tray in the preheated oven for 8-10 min until the skin in blackened.
This can also be done in the microwave: prick the bananapeel with a fork and heat in the microwave for 20-30 sec until softened.
Tip!Heating the banana will only make it soft, it will not ripen or sweeten the banana. To ripen, place the bananas in a brown paper bag for 1-2 days until ripened.
2 Mix dry ingredients
In a large bowl, mix together the flour, bakingsoda and a pinch of salt.
3 Mash banana
In a microwavable bowl, heat the butter in the microwave in 20-30 sec bursts until melted.
Add 3 soft bananas to the butter and use a fork to mash the banana until mostly smooth.
4 Mix wet ingredients
To the bowl with the melted butter and mashed banana, add the brownsugar, whitesugar, sourcream, egg and vanillaessence.
Use a spatula to mix well.
5 Bake
Combine the wet and dry ingredients to form a thick batter.
Add the Belgiandarkchocolate and stir through.
Grease and line a 20x10cm loaf tin with baking paper.
Pour the batter into the loaf tin.
Slice the last banana in half lengthwise and press each half into the top of the batter.
Bake for 55-60 min until a skewer inserted into the centre comes out clean.
Tip!If the loaf is browning too quickly, place a sheet of baking paper over the top and continue to bake until cooked through.
6 Serve
Allow the loaf to cool in the tin for 10 min before removing.
Slice the Banana and Belgian Dark Chocolate Loaf into thick generous slices.
