Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Mix dry ingredients
Preheat the oven to 180°C/160°C fan.
Line a tray with 6muffincups.
In a large bowl, combine the flour, bakingpowder, bakingsoda and a pinch of salt.
Set aside.
2 Mash bananas
In a separate large bowl, heat the butter in the microwave in 20 sec intervals until melted.
Add the bananas to the meltedbutter.
Use a fork to mash the bananas and mix with the meltedbutter.
Tip!If the bananas are too firm, place unpeeled bananas in the oven at 180°C for 15-20 min until the skin goes black and the flesh is soft. Alternatively, pierce an unpeeled banana all over with a fork and microwave in 30 sec intervals until the banana has softened.
3 Mix wet ingredients
Once mashed, add the brownsugar, sourcream and egg.
Whisk well to incorporate.
4 Make batter
Add the dry ingredients to the butter and banana mixture.
Using a spoon or spatula, gently mix until combined.
Tip!Be careful not to over-mix the batter as this will result in a tough, bread-like muffin.
5 Bake
Evenly divide the muffin batter between the muffincups.
Bake in the centre of the oven for 20-25 min or until a skewer inserted into the centre of a muffin comes out clean.
Allow to cool in the muffintray for 4-5 min before removing.
6 Serve
Serve the Banana Muffins with your favourite beverage or on-the-go!
Tip!These muffins are great warm from the oven, topped with your preferred butter or spread.
