Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Boil rice
Rinse and drain the rice.
Add the rice, a pinch of salt and the measured water to a pot with a lid.
Bring to a boil over a high heat.
Lower heat, cover and cook for 12-14 min, until the rice is tender.
Remove from the heat and keep covered until serving.
2 Make salad
Meanwhile, thinly slice the cabbage.
Peel and grate the carrot.
Cut the cucumber into this strips or batons.
Pick the corianderleaves.
Cut 1 lime in half.
In a large bowl, combine the cabbage, carrot, cucumber and coriander.
Squeeze limejuice over the salad and mix well.
Season with a pinch of salt and pepper.
Tip!If cooking for kids, keep a portion of chopped carrot and cucumber separate.
3 Make sauce
Cut the remaining lime in half.
In a small bowl, combine the mayonnaise, sweetchillisauce, Srirachasauce, honey and a squeeze of limejuice to taste.
This is the Bang Bangsauce.
4 Spice chicken
Cut the chicken into bite-sized cubes.
To a bowl, add the chicken, paprikapowder, 0.5 sachetgarliconionpowder, a pinch of salt and pepper.
Mix to coat the chicken.
Tip!If cooking for kids, fry a portion of the chicken seasoned with a pinch of salt and pepper only.
5 Fry chicken
Heat a large frying pan over medium-high heat with a drizzle of oil.
Fry the chicken for 4-5 min on each side until golden and cooked through.
Once cooked, remove from the heat.
6 Serve
Serve the Chicken over warm Rice alongside the Crunchy Slaw.
Drizzle with Bang BangSauce.
Garnish with sesameseeds.
Tip!If cooking for kids, serve the plain rice alongside plain chicken and reserved cucumber and carrot.
