Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Roast potatoes
Preheat the oven to 200°C/180°C fan.
Chop the potatoes (skins on) into small bite-sized pieces.
Add them onto a baking tray with a drizzle of oil and a generous pinch of salt.
Roast for 35-40 min until golden and crisp.
2 Make patties
Meanwhile, peel and finely chop the onion.
Add the beefmince and half of the onion (reserve the remaining onion for step 5) to a large mixing bowl with a pinch of salt and pepper.
With clean hands, knead until all the ingredients are fully combined.
Divide the mixture into 4 pieces, and shape each piece into a burger patty.
Tip!Overmixing the beef mince can make the patties heavy and dense. To avoid this, just gently mix the beef mince until the ingredients are combined.
3 Fry patties
Heat a non-stick pan over a medium-high heat with a drizzle of oil.
Once hot, fry the patties for 3-4 min on each side or until browned and cooked through.
Once cooked, transfer the patties to a plate and reserve the pan.
4 Prep
Meanwhile, clean the mushrooms with a cloth, knife or brush (don't wash them with water).
Roughly chop or tear the mushrooms.
Peel and mince the garlic.
5 Make sauce
Return the reserved pan over a medium-high heat with a second drizzle of oil.
Once hot, fry the mushrooms and the remaining onion with a pinch of salt for 5 min.
Add the garlic and fry for 1 min further.
Add the creamcheese, measured water and 0.5 stockcube.
Bring to a simmer over a medium heat for 5 min or until the sauce thickens.
Tip!Add a splash of water if the sauce thickens too quick.
6 Serve
Meanwhile, pick and finely chop the parsley leaves.
Return the patties to the mushroomsauce with half of the parsley and simmer for 1 min further.
Serve the Beef Patties in Creamy Mushroom Sauce alongside Roasted Potatoes.
Garnish with the remaining parsley.
