Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Bake wedges
Preheat the oven to 200°C/180°C fan.
Slice the potatoes into wedges (skin-on).
Add to a lined baking tray, drizzle with oil and sprinkle with the potatoseasoning.
Bake for 30-35 min (turning halfway), or until golden.
Tip!If using an air fryer, preheat to 180°C. Mix the potatoes wedges, seasoning and a drizzle of oil together in the air fryer basket. Air fry for 20-25 min until cooked through, tossing halfway through.
2 Prep
Chop the sausages into bite-sized pieces.
Peel and finely chop the onions and garlic.
Drain and rinse the whitebeans.
3 Fry sausages
Heat a large frying pan over a medium-high heat with a small drizzle of oil.
Fry the sausages for 3-4 min, until browned all over.
Once browned, remove the sausages from the pan.
Retain the pan and sausageoil.
4 Cook casserole
Return the pan to the heat.
Add the onions and garlic to the pan and fry for 5 min until softened.
Add the tomatopaste, Worcestershiresauce, thyme, brownsugar and 0.5 stockcube.
Fry for 30 seconds until fragrant.
Add the passata, measured water and beans.
Bring to a boil, add the sausages back, lower the heat to a simmer and cover.
Cook for 15-18 min, until the sauce has thickened.
Tip!For an extra thick sauce, remove the lid and cook for a further 5 min.
5 Cook broccoli
Meanwhile, trim the broccoli florets, discarding the woody ends.
Bring a pan of lightly salted water to the boil.
Add the broccoli and steam for 3-5 min until tender.
Drain.
6 Serve
Serve the Sausageand Bean Casserole with Wedges and Broccoli.
