Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Cook quinoa

1 Cook quinoa

Add the quinoa to a bowl, cover with warm water and rinse. Drain in a fine sieve. Add the measured water to a pot and bring it to a boil. Add the quinoa and a pinch of salt. Cover with a lid, reduce the heat to low and simmer for 15 min or until the liquid is absorbed and the quinoa is tender.

Meanwhile, deseed and finely slice the pepper. Peel and finely chop half of the onion. Peel and finely slice the remaining onion. Finely slice the remaining half of the onion.
Make patties

3 Make patties

Add the mince and the garlic powder, soy sauce, thyme, oregano, smoked paprika, salt, black pepper and the chopped onion (reserve the sliced onion for step 3) to a large bowl. With clean hands, knead until all the ingredients are fully combined. Divide the mixture into 4, and shape each piece into a burger patty.
Fry

Heat a large pan over a medium-high heat with a drizzle of oil. Once hot, add the patties and fry for 3-4 min on each side or until browned and cooked through. Transfer the patties to a plate. Wipe and reserve the pan. Return the pan to a medium-high heat with a second drizzle of oil. Once hot, add the peppers and the sliced onions with a pinch of salt and fry for 5 min or until the vegetables are slightly softened.

Meanwhile, grate the cucumber and squeeze out any excess water. Peel and grate the garlic. In a small bowl, mix together the cucumber, garlic, yogurt and salt. This is your tzatziki. Chop the cherry tomatoes in half.
Serve

6 Serve

Divide the quinoa among bowls. Top with the patties, onions and peppers, cherry tomatoes and the rocket with a drizzle of olive oil. Serve the tzatziki alongside.
