Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Prep

1 Prep

  • Place the beyond meat patties in a bowl.
  • Season the patties with a pinch of salt, pepper and oregano.
  • Using clean hands, divide each patty in half.
  • Form each half into smaller, oval patties.
  • Deseed and slice the peppers into strips.
Make salad

2 Make salad

  • Pick and roughly tear the basil leaves.
  • Chop the cherry tomatoes into quarters.
  • In a bowl, combine the basil, tomatoes and olives.
  • Add the balsamic vinegar, a drizzle of olive oil, pinch of salt and pepper.
  • Mix well.
  • Set salad aside.
Toast bread

3 Toast bread

  • Cut the ciabattas in half.
  • Drizzle each side with a small amount of oil.
  • Heat a large frying pan over a medium-high heat.
  • Add the bread cut side down.
  • Toast for 1-2 min until golden and crisp.
  • Once toasted, remove the bread and reserve the pan.
Fry sausage

4 Fry sausage

  • Heat the reserved pan over a medium-high heat with a drizzle of oil.
  • Once hot, add the patties.
  • Fry for 2-3 mins each side.
  • When you flip the patties the first time add the peppers. Cook for the remaining time.
  • Top the patties with the mozzarella, cover, cook until melted.
Tip! Drain some of the excess oil during frying the patties to make a less oily meal!
Make mustard mayo

5 Make mustard mayo

  • Meanwhile finely chop half the gherkins (saving some for serving).
  • In a small bowl, combine the chopped gherkins, mustard and mayonnaise.
Serve

6 Serve

  • Spread the mustard mayo on the toasted ciabatta.
  • Stack the peppers, sausage patties, remaining gherkins and rocket leaves on top.
  • Serve the Beyond Meat Sandwich with Tomato and Basil Salad on the side.
