Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Place the beyondmeatpatties in a bowl.
Season the patties with a pinch of salt, pepper and oregano.
Using clean hands, divide each patty in half.
Form each half into smaller, oval patties.
Deseed and slice the peppers into strips.
2 Make salad
Pick and roughly tear the basilleaves.
Chop the cherrytomatoes into quarters.
In a bowl, combine the basil, tomatoes and olives.
Add the balsamicvinegar, a drizzle of oliveoil, pinch of salt and pepper.
Mix well.
Set salad aside.
3 Toast bread
Cut the ciabattas in half.
Drizzle each side with a small amount of oil.
Heat a large frying pan over a medium-high heat.
Add the bread cut side down.
Toast for 1-2 min until golden and crisp.
Once toasted, remove the bread and reserve the pan.
4 Fry sausage
Heat the reserved pan over a medium-high heat with a drizzle of oil.
Once hot, add the patties.
Fry for 2-3 mins each side.
When you flip the patties the first time add the peppers. Cook for the remaining time.
Top the patties with the mozzarella, cover, cook until melted.
Tip!Drain some of the excess oil during frying the patties to make a less oily meal!
5 Make mustard mayo
Meanwhile finely chop half the gherkins (saving some for serving).
In a small bowl, combine the chopped gherkins, mustard and mayonnaise.
6 Serve
Spread the mustardmayo on the toasted ciabatta.
Stack the peppers, sausagepatties, remaining gherkins and rocketleaves on top.
Serve the BeyondMeat Sandwich with Tomato and Basil Salad on the side.
