Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Bake sweet potatoes
Preheat the oven to 225°C. Scrub the sweet potatoes clean, or peel them. Cut to wedges (thick fries). Place them onto an oven tin lined with baking paper, and drizzle with oil and salt. Bake in the oven for about 15-20 minutes (see step 3).
2 Make patties
Meanwhile, peel and mince onion and garlic. Heat oil in a pan and fry onion for 5 minutes. Add garlic and fry for 2 minutes. In a food processor, combine fried onion, rinsed and drained black beans, oats, cumin, smoked paprika, chilli flakes, coconut oil, salt and pepper. Mix to a paste (it doesn't have to be fully smooth). If you don't have a food processor, use a mixer and a bowl instead.
3 Add and bake
With oiled hands, form the bean mixture into small patties. Add the patties on the oven tin with the sweet potatoes. Continue baking for about 10 minutes.
4 Prepare sides and serve
Slice tomatoes and avocados, cut limes to wedges. Serve the patties and sweet potato wedges with sweet chilli sauce and tomato and avocado slices. Squeeze some lime juice on top just before eating.
