Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Boil pasta

1 Boil pasta

  • Bring a large pot of salted water to boil.
  • Add the fusilli pasta.
  • Cook for 8-10 min until 'al dente' or cooked to your liking. Drain.
  • Set aside to cool.
Tip! Rinse under cold water or add a drizzle of oil to prevent the pasta sticking.
Prep vegetables

2 Prep vegetables

  • Slice cherry tomatoes in half.
  • Drain the sweet corn.
  • Pick and finely chop the coriander.
  • Peel and finely grate the garlic.
Make dressing

3 Make dressing

  • Zest the limes and cut it in half.
  • In a large bowl, combine the yogurt, lime zest, lime juice to taste, agave, coriander cumin, smoked paprika, vegetable seasoning and a pinch of salt, pepper and chipotle(spicy!) to taste.
  • Whisk well until the dressing is thick and creamy.
Combine

4 Combine

  • Once the pasta is cooked, add it to the dressing with all of the other ingredients.
  • Toss well to coat

5 Serve

  • Serve the Black Bean and Sweet Corn Pasta Salad with a Lime Yogurt Dressing as an accompaniment to dinner or packed for lunch the next day.
