Before you start

Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Prep

1 Prep

  • Preheat oven to 200°C/180°C fan.
  • Peel and finely chop the onion and garlic.
  • Heat a large pot over medium heat with a drizzle of oil.
  • Fry the onion for 2-3 min until softened.
  • Add the beef mince and garlic. Fry for 7-8 min until browned.
  • Add the curry powder, coriander cumin powder, bread crumbs, measured water, tomato paste, apricot jam, vinegar, raisins, salt and pepper.
  • Stir to completely incorporate. Cook for 1-2 min.
Tip! Leave out the raisins if you prefer it less sweet.
Transfer

2 Transfer

  • Tip the minced meat into a medium sized baking dish (25x18 cm) and press down firmly with the back of a spoon or spatula to create an even layer.
Bake

3 Bake

  • In a small jug, mix together the egg and 100ml milk with a pinch of salt.
  • Pour this over the top of the minced meat.
  • Top with a dried bay leaf.
  • Bake for 20-25 min until the egg layer is set and starting to brown.
  • Remove from the oven.
Make rice

4 Make rice

  • Meanwhile, rinse and drain the rice.
  • Add the rice, turmeric powder, stick cinnamon, a big pinch of salt and the measured water to a pot with a lid and bring to a boil over a high heat.
  • Lower the heat, cover and cook for 12-14 min, until rice is tender.
  • Remove from the heat, stir through the butter and keep covered until serving.
Make salad

5 Make salad

  • Roughly chop the cucumber and tomato.
  • Pick the leaves of the coriander.
  • In a small bowl, toss together the salad ingredients with a pinch of salt.
Serve

6 Serve

  • Serve each Bobotie portion with a side of fragrant Yellow Rice, a helping of Quick Chop Salad and a dollop of Chutney.
