Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Boil rice

1 Boil rice

  • Rinse and drain the rice.
  • In a measuring jug, combine the tomato paste, measured water and vegetable seasoning.
  • Add the rice and the tomato mix to a pot with a lid. Bring to a boil over a high heat.
  • Lower heat, cover and cook for 15-18 min, until all the water is absorbed and the rice is tender.
  • Remove from the heat and keep covered until serving.
Prep

  • Meanwhile, peel and finely slice the onion.
  • Chop the romaine lettuce into bite-sized pieces.
  • Finely chop the chives.
  • Chop the cucumber into bite-sized pieces.
Fry halloumi

3 Fry halloumi

  • Cut the halloumi into thick slices and coat in smoked paprika powder.
  • Heat a pan over medium heat with a drizzle of oil.
  • Fry the halloumi for 2-3 min on each side until golden brown and crisp.
  • Turn off the heat and add the hot sauce, honey and butter. Mix until combined and glossy.
  • Set aside and keep warm.
Make ranch

4 Make ranch

  • In a bowl, combine the mayonnaise, sour cream, lemon pepper seasoning and white vinegar until smooth.
  • Add half the chives (save some for garnish).
  • Add a splash of water.
  • Stir together to create a dressing thick enough to cling to a spoon, but still pourable.
Tip! Too thick? Add a splash of water to loosen up.
Make salad

5 Make salad

  • In a large bowl, combine the onion, lettuce and cucumber.
  • Drizzle with a splash of olive oil, a pinch of salt, pepper and 1 Tbsp of ranch dressing.
  • Toss well to coat.
Serve

6 Serve

  • Serve the Buffalo Halloumi Bowl with Tomato Rice, Salad and Ranch Dressing.
  • Garnish with remaining chives.
