Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Boil rice
Rinse and drain the rice.
In a measuring jug, combine the tomatopaste, measuredwater and vegetableseasoning.
Add the rice and the tomatomix to a pot with a lid. Bring to a boil over a high heat.
Lower heat, cover and cook for 15-18 min, until all the water is absorbed and the rice is tender.
Remove from the heat and keep covered until serving.
2 Prep
Meanwhile, peel and finely slice the onion.
Chop the romainelettuce into bite-sized pieces.
Finely chop the chives.
Chop the cucumber into bite-sized pieces.
3 Fry halloumi
Cut the halloumi into thick slices and coat in smokedpaprikapowder.
Heat a pan over medium heat with a drizzle of oil.
Fry the halloumi for 2-3 min on each side until golden brown and crisp.
Turn off the heat and add the hotsauce, honey and butter. Mix until combined and glossy.
Set aside and keep warm.
4 Make ranch
In a bowl, combine the mayonnaise, sourcream, lemonpepperseasoning and whitevinegar until smooth.
Add half the chives (save some for garnish).
Add a splash of water.
Stir together to create a dressing thick enough to cling to a spoon, but still pourable.
Tip!Too thick? Add a splash of water to loosen up.
5 Make salad
In a large bowl, combine the onion, lettuce and cucumber.
Drizzle with a splash of olive oil, a pinch of salt, pepper and 1 Tbsp of ranch dressing.
Toss well to coat.
6 Serve
Serve the Buffalo Halloumi Bowl with TomatoRice, Salad and Ranch Dressing.
Garnish with remaining chives.
