Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Bake fries
Preheat the oven to 220°C/200°C fan.
Slice the potatoes (skins on) into fries.
Distribute the fries on a lined baking tray.
Add a drizzle of vegetable oil and a generous pinch of salt.
Toss the fries in the oil until they are fully coated.
Roast for 30 min or until golden and crisp.
Tip!For a crisper finish, soak the chips in cold water for 30-60 min before baking.
2 Season fish
On a plate, mix together the paprika, allspice, a pinch of cayenne(spicy!), garliconionpowder, coconutsugar and salt.
Gently press the seabream (flesh side) into the spice mix till fully coated.
3 Prep
Pick and finely chop the coriander.
Zest the limes and then cut in half.
In a small bowl, combine the sourcream, juice of half a lime, limezest, salt and pepper.
4 Make chilli herb peas
Boil a kettle.
Add the peas to a pot with a lid, cover with hot water (just enough to cover them) and add a pinch of salt.
Bring to a boil over high heat and cook for 2-3 min until softened.
Drain and return the warmed peas to the pot.
Mash together with the butter and coriander.
Season with salt and a pinch of chilliflakes(spicy!).
Set aside and keep warm.
5 Fry fish
Heat a non-stick pan with a drizzle of oil over a medium-high heat.
Fry the seabream, spice-side down, and cook for 3-4 min on each side or until cooked through.
6 Serve
Serve the Caribbean-style Seabream with Chilli Herb Peas, Fries and Lime Crema.
