1 Cook the cauliflower
Separate cauliflower to florets. Cook in boiling water for 6–7 minutes until crisp-tender. Drain. Chop to cubes.

2 Boil the eggs
Boil the eggs for about 7 minutes. Submerge to cold water. Peel and chop.

3 Cook the beans
Rinse green beans. Remove stems. Bring a pot of water to a boil and season the water with salt. Add green beans, and boil for 4–5 minutes, until crisp-tender. Drain.

4 Combine and serve
In a bowl, combine cubed, cooked cauliflower, cooked and chopped eggs, green beans, cottage cheese, mayonnaise, yogurt, finely chopped chives, drained capers and mustard. Season well with black pepper, and salt. Mix well. Let the flavors develop for at least 10 minutes.
Tips for fussy eaters
Separate some of the cauliflower salad before adding the capers. Serve their salad and green beans with boiled potatoes
Pro tip
Steam the vegetables instead of boiling for extra nutrients!
