Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Make pickle
Preheat the oven to 200°C/180°C fan.
Cut the cucumber into thin rounds.
In a small pot or in a bowl in the microwave, heat the white sugar, rice vinegar and 80ml water with a pinch of salt.
Bring to the boil, stirring to dissolve the white sugar.
Add the grated carrot and cucumber to a bowl, pour over the hot liquid and set aside to quick-pickle.
2 Toast baguettes
Toast the baguettes in the oven for 8-10 min until crispy on the outside and heated through.
Slice the baguettes lengthways, keeping one edge intact.
3 Make dressing
Meanwhile, peel and mince the garlic.
Cut the lime into wedges.
In a bowl, combine the brown sugar, soy sauce and sambal oelek(spicy!).
Add the garlic and a squeeze of lime juice to taste.
Mix until the brown sugar dissolves.
Reserve any remaining lime wedges for serving.
4 Cut chicken
Pat dry the chicken with paper towel.
Cut into bite-sized pieces or finely shred, using two forks.
5 Serve
Spread the mayonnaise onto one half of each of the toasted baguettes.
Drain the pickle.
Fill the baguettes with the cooked chicken breast and drained pickle.
Drizzle over the dressing.
Serve the Chicken Banh Mi with Quick Pickles with a squeeze of lime juice to taste.
