Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Prep veg

1 Prep veg

  • Boil a kettle of water.
  • Peel and roughly dice the onion.
  • Peel and roughly chop the garlic.
  • Slice the red pepper into strips.
  • Trim the green bean.
Make mash

2 Make mash

  • Peel and chop the potatoes into bite-sized pieces.
  • Add the potatoes to a pot of salted water and bring to the boil.
  • Cook for 15-20 min until soft.
  • Drain the potatoes and return to the pot.
  • Mash until smooth, gradually adding the milk until it reaches the desired consistency.
  • Mix in the parmesan till combined.
  • Season with salt and pepper to taste.
Sear chicken

3 Sear chicken

  • Meanwhile, pat the chicken dry and season with salt and pepper.
  • Heat a large pan or dutch oven on medium-high heat with a drizzle of oil.
  • Sear the chicken for 5-6 min, until golden on all sides.
  • Remove and set aside.
  • Reserve the pan.
Cook veg

4 Cook veg

  • Return the pan, or dutch oven, to medium-high heat with a drizzle of oil.
  • Cook the onion for 2 min.
  • Add the red pepper and half the garlic (reserving the rest for the green beans).
  • Cook for 3-4 min until softened and most of the liquid has evaporated.
  • Stir in the tomato paste, oregano, rosemary and bay leaf.
  • Cook for 1 min until the tomato paste darkens.
Make sauce

5 Make sauce

  • Return the chicken to the pan.
  • Add the tomato passata, stock cube, measured water and vinegar.
  • Bring to a boil.
  • Cover and simmer on low for 15-20 min until the chicken is cooked through and the sauce thickens.
  • Remove the lid for the last 5 min to reduce the sauce.
Cook green beans

6 Cook green beans

  • Meanwhile, heat a pan over medium heat with a drizzle of oil.
  • Add the green beans, remaining garlic and a splash of water.
  • Cover and steam for 3-4 min until tender.
  • Serve the Chicken Cacciatore with Creamy Parmesan Mash & Garlic Green Beans.
