Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep veg
Boil a kettle of water.
Peel and roughly dice the onion.
Peel and roughly chop the garlic.
Slice the redpepper into strips.
Trim the greenbean.
2 Make mash
Peel and chop the potatoes into bite-sized pieces.
Add the potatoes to a pot of salted water and bring to the boil.
Cook for 15-20 min until soft.
Drain the potatoes and return to the pot.
Mash until smooth, gradually adding the milk until it reaches the desired consistency.
Mix in the parmesan till combined.
Season with salt and pepper to taste.
3 Sear chicken
Meanwhile, pat the chicken dry and season with salt and pepper.
Heat a large pan or dutch oven on medium-high heat with a drizzle of oil.
Sear the chicken for 5-6 min, until golden on all sides.
Remove and set aside.
Reserve the pan.
4 Cook veg
Return the pan, or dutch oven, to medium-high heat with a drizzle of oil.
Cook the onion for 2 min.
Add the redpepper and half the garlic (reserving the rest for the greenbeans).
Cook for 3-4 min until softened and most of the liquid has evaporated.
Stir in the tomatopaste, oregano, rosemary and bayleaf.
Cook for 1 min until the tomatopaste darkens.
5 Make sauce
Return the chicken to the pan.
Add the tomato passata, stockcube, measured water and vinegar.
Bring to a boil.
Cover and simmer on low for 15-20 min until the chicken is cooked through and the sauce thickens.
Remove the lid for the last 5 min to reduce the sauce.
6 Cook green beans
Meanwhile, heat a pan over medium heat with a drizzle of oil.
Add the greenbeans, remaining garlic and a splash of water.
Cover and steam for 3-4 min until tender.
