Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Boil pasta

1 Boil pasta

  • Bring a large pot of salted water to the boil.
  • Once boiling, add the pasta and cook for 9-11 min until tender.
  • Drain and reserve 1 cup of the pasta water.
Prep

2 Prep

  • Chop the chicken into bite-sized pieces.
  • Deseed and chop the peppers into strips.
  • Peel and finely slice the onion.
  • Peel and finely chop the garlic.
Fry chicken

3 Fry chicken

  • Heat a large frying pan over a medium-high heat with a drizzle of oil.
  • Fry the chicken for 4 min, until golden.
  • Add the fajita seasoning, smoked paprika and chicken seasoning and fry for a further 30 sec.
Add veg

4 Add veg

  • Add the peppers, onion and garlic to the chicken.
  • Fry for 3-4 min, until the veg is softened.
Finish

5 Finish

  • Mix in the sour cream.
  • Add a splash of the pasta water and mix well.
  • Season with salt and pepper to taste.
Serve

6 Serve

  • Serve the Chicken Fajita Pasta topped with the cheddar, salsa and coriander leaves.
