Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Roast potatoes
Preheat the oven to 200°C/180°C fan.
Chop the potatoes (skins on) into small bite-sized pieces.
Add to a large baking tray with a drizzle of vegetable oil and a generous pinch of salt.
Roast for 20 min.
2 Prep
Meanwhile, peel and mince the garlic.
Finely chop the dates.
In a large bowl, combine the oliveoil, dates, redvinegar, sugar, garlic, driedoregano, bayleaves, olives, capers, salt and pepper.
Tip!Tough dates? Briefly soak them in hot water to help them to soften.
3 Marinate chicken
Place the chicken in the marinade.
Turn until fully coated.
Tip!For deeper flavour, marinate the chicken up to 24 hours in advance.
4 Bake chicken
Place the chickenthighs skin-side up in a baking dish.
Pour the marinade over the top.
Bake for 25-30 min or until cooked through.
5 Roast vegetables
Meanwhile, de-seed and chop the peppers into large chunks.
Peel and slice the onion into wedges.
After the potatoes have been cooking for 20 min, add the peppers and onions to the tray.
Drizzle with oil and a pinch of salt.
Bake for 20 min further.
6 Serve
Serve the ChickenMarbella with RoastedPotatoes and Peppers.
Spoon over any leftover juices from the tray.
