Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Roast potatoes
Preheat the oven to 200°C/180°C fan.
Chop the potatoes (skins on) into small bite-sized pieces.
Add them to a baking tray with a drizzle of vegetable oil, and a generous pinch of salt and spread the thyme springs on top evenly.
Roast for 15 min.
2 Prep
Meanwhile, in a large bowl, mix together the chickenmince, garliconionpowder and a generous pinch of salt and pepper.
With clean hands, knead until all the ingredients are fully combined.
Divide the mixture into 10 pieces.
Shape each piece into a meatball.
Tip!To stop the chicken mince from sticking to your hands when shaping them into meatballs, wet your hands with water before shaping each portion of the mixture.
3 Make sauce
Heat a small saucepan over a medium heat with the butter.
Once melted, add the flour.
Cook, stirring continuously, for 1 min or until a sandy paste has formed.
Once a paste has formed, gradually whisk in the measured water, Worcestershire, onionmarmalade and a generous pinch of salt and pepper.
Simmer for 3 min or until the sauce thickens up.
Cover and set aside.
4 Bake chicken
Meanwhile, trim the greenbeans.
Once the potatoes have been roasting for 15 min.
Push them to one side of the baking tray.
Place the chickenmeatballs and greenbeans onto the baking tray.
Drizzle with of oil and a pinch of salt.
Bake for 15 min further or until the chicken is cooked through.
Tip!To check if the chicken is cooked, insert a knife into the meat - if the juices run clear, it's ready.
5 Serve
Once the potatoes and chicken are cooked, remove and discard the thyme sprigs from the potatoes.
Serve the Chicken Meatballs and Thyme Roasted Potatoes with Green Beans and Onion Gravy.
