Before you start

Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Roast potatoes

1 Roast potatoes

  • Preheat the oven to 200°C/180°C fan.
  • Chop the potatoes (skins on) into small bite-sized pieces.
  • Add them to a baking tray with a drizzle of vegetable oil, and a generous pinch of salt and spread the thyme springs on top evenly.
  • Roast for 15 min.

  • Meanwhile, in a large bowl, mix together the chicken mince, garlic onion powder and a generous pinch of salt and pepper.
  • With clean hands, knead until all the ingredients are fully combined.
  • Divide the mixture into 10 pieces.
  • Shape each piece into a meatball.
Tip! To stop the chicken mince from sticking to your hands when shaping them into meatballs, wet your hands with water before shaping each portion of the mixture.
Make sauce

3 Make sauce

  • Heat a small saucepan over a medium heat with the butter.
  • Once melted, add the flour.
  • Cook, stirring continuously, for 1 min or until a sandy paste has formed.
  • Once a paste has formed, gradually whisk in the measured water, Worcestershire, onion marmalade and a generous pinch of salt and pepper.
  • Simmer for 3 min or until the sauce thickens up.
  • Cover and set aside.
Bake chicken

4 Bake chicken

  • Meanwhile, trim the green beans.
  • Once the potatoes have been roasting for 15 min.
  • Push them to one side of the baking tray.
  • Place the chicken meatballs and green beans onto the baking tray.
  • Drizzle with of oil and a pinch of salt.
  • Bake for 15 min further or until the chicken is cooked through.
Tip! To check if the chicken is cooked, insert a knife into the meat - if the juices run clear, it's ready.
Serve

5 Serve

  • Once the potatoes and chicken are cooked, remove and discard the thyme sprigs from the potatoes.
  • Serve the Chicken Meatballs and Thyme Roasted Potatoes with Green Beans and Onion Gravy.
