Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Preheat oven to 200°C/180°C fan.
Pick and finely chop the parsley leaves.
Peel and finely chop the onion.
Cut the zucchini into bite-sized pieces.
2 Bake meatballs
To a bowl, add half of the onion, chickenmince, garlicpowder, breadcrumbs, parsley and chicken seasoning.
Knead well to incorporate all the ingredients.
Form the mix into 10 balls.
Add the balls to a lined baking tray.
Bake for 15-18 min, until cooked through.
3 Make sauce
Heat a large non-stick frying pan over a medium-high heat with a drizzle of oil.
Once hot, add the remaining half of the onion and zucchini.
Fry for 5-7 min until softened.
Add the tomatopaste, harissa(spicy!), coriandercumin, smokedpaprika, brownsugar, thyme, passata, measured water, 0.5 stockcube and onionflakes.
Mix well and bring to a boil.
Once boiling, lower the heat. Simmer for 6-8 min.
Once the meatballs are cooked, add them to the sauce.
Simmer for 3-4 min until warmed through.
4 Cook couscous
Boil the measured water.
Add the couscous and salt to a pan or bowl and pour over the boiling water.
Cover and leave to steam for 10-12 min until tender.
Once cooked use a fork to fluff up the couscous.
Keep covered until serving.
5 Make salad
Pick and chop the mint.
Cut the lemon into wedges.
Cut the cucumber into small bite-sized pieces.
To a bowl, add the cucumber and mint.
Squeeze in the lemon juice and a pinch of salt to taste.
6 Serve
Serve the Chicken Meatballs with HarissaTomato Sauce with Couscous alongside.
Crumble over the feta and serve with the salad on the side.
