Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Marinate chicken
Preheat the oven to 220°C/200°C fan or the grill to medium-high heat.
Soak the bambooskewers in water.
Chop the chicken into bite-sized chunks.
Cut the lemon in half.
Peel and finely chop the garlic.
In a large bowl, combine the garlic, tomatopaste, paprika, Arabicmasala, salt, pepper, 1 tbsp of yogurt (reserving the rest for step 5), a drizzle of oliveoil and a squeeze of 0.5 lemon.
Tip!If using an air fryer, preheat to 180°C.
2 Prep
Deseed and chop the greenpepper into bite-sized pieces.
Thread the marinated chicken and the peppers onto the bamboo skewers.
Make sure to alternate between the peppers and chicken.
Transfer the chickenskewers to a baking or grill tray with a drizzle of oil.
3 Cook chicken
Grill or roast the chickenskewers for 10-12 min or until browned and cooked through.
Tip!If using an air fryer, air fry the skewers for 10-12 min or until cooked through, turning half way through. Do this in batches if necessary.
4 Make slaw
Finely slice the redcabbage.
Deseed and finely chop the redpepper.
Trim and finely slice the springonions.
Pick and finely chop the parsley.
Add the veggies to a large bowl.
Add the juice of the remaining lemon, vinegar, sumac and a pinch of salt and pepper to taste.
Massage the slaw with clean hands.
5 Make yogurt
Pick and finely chop the mint leaves.
To a small bowl, add the yogurt and mint.
Mix until smooth and set aside.
6 Serve
Warm the Arabicflatbread in the microwave for 30-60 seconds.
Serve the Chicken Shish Tawook with the Arabic Slaw with MintYogurt and flatbread on the side.
