Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Make pineapple salsa
Chop the tomatoes into small cubes.
Peel and finely chop the redonion.
Roughly chop the coriander.
Finely chop the redchilli(spicy!).
Cut the pineapplechunks in halves or quarters.
Place the lot in a bowl and toss.
Set the pineapple salsa aside.
Tip!If cooking for kids, set aside a portion of the pineapple and tomatoes.
2 Make chipotle cream
Cut the lime into wedges.
In a second bowl, combine the sourcream, ketchup with a pinch of chipotlepowder(spicy!).
Add salt and squeezes of lime juice to taste.
Set the chipotlecream aside.
Tip!If cooking for kids, set aside a portion of the plain sour cream.
3 Prep
Shred the lettuce.
Cut the chickenbreast into strips.
4 Fry chicken
Heat a large non-stick pan over a medium heat with a drizzle of oil.
Season the chicken with salt and pepper.
Fry the chicken for 4-5 min till cooked through and golden brown.
5 Warm tortillas
Meanwhile, place the tortillawraps on a plate.
Heat them in the microwave for 30-60 secs until warm.
6 Assemble
To serve the Chicken Tacos, spread the ChipotleCream on the warmed tortillawraps. Load with the lettuce, chicken and Pineapple Salsa.
Serve with any remaining limewedges.
Tip!If cooking for kids, serve the chicken, plain pineapple, tomatoes, lettuce, sour cream and tortillas separately. Let the kids build their own tacos!
