Instructions

Make pineapple salsa

1 Make pineapple salsa

  • Chop the tomatoes into small cubes.
  • Peel and finely chop the red onion.
  • Roughly chop the coriander.
  • Finely chop the red chilli (spicy!).
  • Cut the pineapple chunks in halves or quarters.
  • Place the lot in a bowl and toss.
  • Set the pineapple salsa aside.
Tip! If cooking for kids, set aside a portion of the pineapple and tomatoes.
Make chipotle cream

2 Make chipotle cream

  • Cut the lime into wedges.
  • In a second bowl, combine the sour cream, ketchup with a pinch of chipotle powder (spicy!).
  • Add salt and squeezes of lime juice to taste.
  • Set the chipotle cream aside.
Tip! If cooking for kids, set aside a portion of the plain sour cream.
Prep

  • Shred the lettuce.
  • Cut the chicken breast into strips.
Fry chicken

4 Fry chicken

  • Heat a large non-stick pan over a medium heat with a drizzle of oil.
  • Season the chicken with salt and pepper.
  • Fry the chicken for 4-5 min till cooked through and golden brown.
Warm tortillas

5 Warm tortillas

  • Meanwhile, place the tortilla wraps on a plate.
  • Heat them in the microwave for 30-60 secs until warm.
Assemble

6 Assemble

  • To serve the Chicken Tacos, spread the Chipotle Cream on the warmed tortilla wraps. Load with the lettuce, chicken and Pineapple Salsa.
  • Serve with any remaining lime wedges.
Tip! If cooking for kids, serve the chicken, plain pineapple, tomatoes, lettuce, sour cream and tortillas separately. Let the kids build their own tacos!
