Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep vegetables
Trim the tenderstembroccoli and chop it into bite-sized pieces.
Trim and finely slice the spring onions.
Finely shred the Chinesecabbage.
2 Boil tenderstem broccoli
Add a generous amount of water to a non-stick pan with a lid and bring to a boil.
Once boiling, add the tenderstembroccoli with a pinch of salt.
Boil, covered, for 3 min.
Drain well.
Transfer the tenderstembroccoli to a plate.
Reserve and wipe the pan.
Tip!Using a frying pan to steam your broccoli helps reduce washing up! Alternatively though, you can use a regular saucepan for this step.
3 Fry beef
Return the pan to a medium-high heat with a drizzle of vegetable oil.
Once hot, add the beefmince.
Fry for 6 min, stirring regularly until brown and crispy.
Add the gingergarlicpaste, soysauce, sweetsoysauce, gochujangpaste(spicy!) and a pinch of chilliflakes(spicy!).
Cook for 30 sec.
Add the beef to the broccoli plate and keep warm.
Reserve the pan.
4 Stir-fry
Return the pan to a medium-high heat with a drizzle of vegetable oil.
Add the cabbage with a pinch of salt.
Fry for 3 min.
Add the drained tenderstembroccoli, beef and spring onion to the pan.
Cook for 1 min further.
Add the oyster sauce.
Simmer for 2 min.
Remove the pan from the heat, add the bean sprouts and sesameoil and give everything a good mix up.
Set aside to keep warm.
5 Fry eggs
Heat a second non-stick pan with a drizzle of vegetable oil over a medium heat.
Once hot, crack the eggs into the pan.
Fry for 2-4 min or until done to your liking.
Tip!For a well-done egg yolk, cover the pan with a lid.
6 Serve
