Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep vegetables
Peel and finely chop the redonion.
Peel and mince the garlic.
Deseed and finely chop the redpepper.
2 Fry mince
Heat a large pan over a medium-high heat with a drizzle of oil.
Once hot, fry the onion and beefmince with a pinch of salt for 5-7 min until browned.
3 Add seasoning
Once browned, add the garlic, redpepper, fajitaseasoning and chipotle(spicy!).
Fry for 2 min further.
Tip!Sensitive to spice? Go easy on the chipotle.
4 Simmer
Add the tomatopassata, crumbled 0.5 stockcube, measured water and brownsugar.
Mix well, reduce the heat to medium-low and simmer for 5 min.
Season with salt and blackpepper.
Remove from the heat.
5 Prep
Meanwhile, finely chop the freshcoriander leaves.
Separate the bostonlettuce leaves.
Slice the lime into wedges.
6 Serve
Add half of the coriander (reserve some for garnish) to the beef and stir through.
Divide the lettuceleaves among plates.
Top them with the Chilli con Carne and garnish with the remaining coriander, dollops of the sourcream and the gratedcheddarcheese.
Serve the limewedges alongside.
