Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Soak noodles
Boil a kettle of water.
To a large bowl, add the noodles with a good pinch of salt, and pour over the hot water.
Cover with a lid or cling film.
Leave to soak for 10 min.
Once tender, drain and rinse with cold water.
Tip!Drizzle the cooked noodles with oil to help prevent them sticking together.
2 Prep
Deseed and slice the red pepper into thin strips.
Slice the babycorn into quarters.
In a small bowl, combine the Chinesechillisauce(spicy!), soysauce, sweetsoysauce, gingergarlicpaste, sesameoil, ricevinegar and sugar.
Set the stir-fry sauce aside.
Tip!Sensitive to spice? Go easy on the Chinese chilli sauce.
3 Fry veg
Heat a large pan over a medium-high heat with a drizzle of oil.
Once hot, add the peppers and babycorn. Fry for 3 min.
Transfer the vegetables to a plate.
Reserve the pan.
4 Fry lamb
Return the reserved pan to a medium-high heat with a small drizzle of oil.
Once hot, fry the lambmince, breaking it up with the spatula for 3 -4 min until browned.
Add the cuminpowder and Chinese5spice.
Fry for 30 sec further.
5 Finish stir-fry
Add the vegetables, noodles, bean sprouts and stir-frysauce to the pan.
Toss to coat in the sauce.
Fry for final 1-2 min.
6 Serve
Pick the corianderleaves.
Serve theChinese-Style CuminLambNoodles with Peppers and BabyCorn.
Garnish with the corianderleaves and sesameseeds.
