Instructions

Mix wet ingredients

1 Mix wet ingredients

  • Remove the butter and eggs from the fridge so they come to room temperature.
  • Preheat oven to 175°C (no fan) and line a 20x30cm loaf pan with baking paper.
  • In a large bowl, use an electric beater to beat the sugar, oil and softened butter for 2-3 min until creamy, pale in colour and light and fluffy in texture.
  • Crack one egg in and beat until well incorporated into the butter mixture, before adding the next.
  • Add the vanilla essence and beat for 30 sec to combine.
Tip! Using oil in baking results in a softer, more tender crumb and gives a moist cake result.
Mix dry ingredients

  • Add the sour cream and stir to incorporate.
  • Add the flour, baking powder and pinch of salt to the wet ingredients and mix until just combined.
  • Avoid mixing for too long as it will lead to a poor cake structure.
Divide batter

3 Divide batter

  • Add the cocoa powder and 2 Tbsp boiling water into a separate bowl. Stir to mix well.
  • Scoop 1 cup of the vanilla batter into the cocoa powder mixture.
  • Mix until combined.
Scoop batter

4 Scoop batter

  • Using an ice cream scoop or big spoon, add 2 scoops of vanilla batter to the lined loaf pan, followed by 1 scoop of chocolate batter on top.
  • Continue adding scoops on top of each other until all the batter is finished.
  • Use the back of a knife or a skewer to swirl the batter from one side the other and back to create the marble effect.
Bake

5 Bake

  • Bake for 40-45 min or until a skewer inserted into the centre comes out clean.
  • Once baked, remove from the oven and place on a wired rack. Allow to cool for 10 min.
  • After 10 min, lift out of the loaf pan and cool completely before slicing.
Make ganache

6 Make ganache

  • Meanwhile, pour the cream into a small jug or bowl and heat in the microwave for 30 sec to 1 min until it is steaming but not boiling.
  • Add the chocolate into the warm cream and stir to form a smooth ganache.
  • When the loaf cake is cool, drizzle the ganache over the top.
  • Slice the Chocolate and Vanilla Marble Loaf Cake into thick slices.
Tip! If you prefer a thick, set ganache, allow it cool in the fridge until no longer pourable but its able to be scooped.
