Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Preheat the oven to 200°C/180°C fan.
Pick half the thyme and chop the parsley.
Peel and chop the onion, carrot, and celery into chunks.
Place half into a food processor (reserve the rest for roasting).
Pulse the vegetables 10-12 times, scraping down in between.
In a bowl, combine the ketchup, brown sugar, and apple cider vinegar.
Set the glaze aside.
Tip!Alternatively, use a box grater to finely grate the vegetables.
2 Fry vegetables
Heat a pan over a medium heat with a drizzle of oil.
Once hot, add the finely chopped vegetables (onion, carrot, and celery mixture) with a pinch of salt.
Fry for 5-6 min until softened and most of the water has evaporated.
Set aside to cool.
Tip!Frying the vegetables will ensure the meatloaf will have a better flavour and overall texture that isn't too crumbly.
3 Mix meatloaf
In a large bowl, combine the beef, garlicpowder, chickenseasoning, paprika, worcestershiresauce, dijonmustard, pankobreadcrumbs, eggs, freshparsley, picked thyme , blackpepper, and the cooked vegetables.
Knead the mixture really well until fully combined.
4 Roast meatloaf
Drizzle oil on a baking tray.
Shape the meatloaf into a 15-18 cm long rectangle on the tray.
Roast for 18-20 minutes.
Once browned, pour the glaze on top, add the remaining vegetables and thyme alongside.
Roast for another 18-20 minutes until the meatloaf and vegetables are fully cooked and the glaze has thickened.
Tip!For the 4-person box, divide the meatloaf into two and bake on the same tray for even cooking.
5 Mash potatoes
Meanwhile, bring a large pot of salted water to the boil.
Peel and chop the potatoes into bite-sized pieces.
Once the water is boiling, add the potatoes.
Cook over medium-high heat for 20 min or until soft.
Once soft, drain the potatoes. Return them to the pot.
Add the gratedcheddar.
Mash until smooth, gradually adding the milk until it reaches your desired consistency.
Season with salt and pepper to taste.
6 Serve
Rest the meatloaf for 5 min, then slice into thick pieces.
