Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Soak porcini mushrooms
Boil the initial amount of measured water and pour it over the dried porcini mushrooms. Leave the porcinimushrooms to steep in water until step 3 (see pro tip).
2 Prep veg
Roughly chop the shiitake and chestnut mushrooms. Peel and finely slice the brown onion.
3 Fry mushroooms and onion
Heat oil in a pot over a medium heat. Fry the mushrooms with a pinch of salt for 5 min. Remove a couple of mushrooms and reserve for garnish. Add the onion and fry for 4 min. Add the soaked porcinimushrooms (with their soaking liquor), the second amount of water and the stockcube. Simmer for 15 min.
4 Stuff cheesy slices
Meanwhile, peel and crush the garlic. Grate the Gruyere. Mix the garlic with the Dijon mustard, gratedGruyere and mozzarella. Sandwich the cheese mixture in between the sourdoughslices.
5 Fry cheesy slices
Heat a drizzle of oil in a pan over a medium heat. Add the cheese sandwiches and place a smaller pan directly on top of them. Place a heavy weight (e.g. several cans) onto the smaller pan and fry for 2-3 min per side until golden.
6 Puree soup
Finely chop the chives. Add the measured cream (see pro tip), Worcestershire sauce and black pepper to the soup and cook for 1 min. Puree the soup in a blender or with a mixer until smooth. Garnish with the chopped chives and serve with the cheesy toasties.
