Instructions

Soak porcini mushrooms

1 Soak porcini mushrooms

Boil the initial amount of measured water and pour it over the dried porcini mushrooms. Leave the porcini mushrooms to steep in water until step 3 (see pro tip).
Prep veg

Roughly chop the shiitake and chestnut mushrooms. Peel and finely slice the brown onion.
Fry mushroooms and onion

Heat oil in a pot over a medium heat. Fry the mushrooms with a pinch of salt for 5 min. Remove a couple of mushrooms and reserve for garnish. Add the onion and fry for 4 min. Add the soaked porcini mushrooms (with their soaking liquor), the second amount of water and the stock cube. Simmer for 15 min.

Meanwhile, peel and crush the garlic. Grate the Gruyere. Mix the garlic with the Dijon mustard, grated Gruyere and mozzarella. Sandwich the cheese mixture in between the sourdough slices.
Fry cheesy slices

5 Fry cheesy slices

Heat a drizzle of oil in a pan over a medium heat. Add the cheese sandwiches and place a smaller pan directly on top of them. Place a heavy weight (e.g. several cans) onto the smaller pan and fry for 2-3 min per side until golden.
Puree soup

6 Puree soup

Finely chop the chives. Add the measured cream (see pro tip), Worcestershire sauce and black pepper to the soup and cook for 1 min. Puree the soup in a blender or with a mixer until smooth. Garnish with the chopped chives and serve with the cheesy toasties.
