Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep
Peel and finely chop the shallots and garlic. Remove the corn leaves. Stand the cob on its end and, using a sharp knife, carefully slice the freshcorn kernels from from it. Grate the Parmesan. Chop the bacon into bite-sized pieces.
2 Cook chicken
Heat a non-stick pan over a medium-high heat with a drizzle of oil. Once hot, add the chicken breasts with a pinch of salt and cook for 5-7 min on either side until golden. Transfer to a plate, reserve the pan.
3 Fry
Return the pan to a medium heat with a drizzle of oil. Add the bacon and shallots and cook for 5 min. Add the garlic and the freshcorn kernels. Cook for 5 min further or until the corn is golden.
4 Broccoli
Meanwhile, cook the broccoli in lightly salted boiling water for 5 min or until tender. Drain once cooked.
5 Simmer
Add the measuredwater, cookingcream and stockcube. Simmer for 5 min or until thickened. Return the chicken to the pan with the grated Parmesan. Increase the heat to medium-high. Simmer for 4 min further. Season with pepper and a squeeze of lemon juice.
6 Serve
Meanwhile, finely chop the chives. Garnish the creamedcornchicken with the freshchives. Serve the broccoli to the side.
