Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Boil potatoes

1 Boil potatoes

  • Bring a pot of salted water to the boil.
  • Chop the potatoes (skins on) into bite-sized pieces.
  • Add to the pot and cook for 15-20 min or until tender.
  • Drain and set aside in the fridge to cool.
Make dressing

2 Make dressing

  • Meanwhile, thinly slice the celery.
  • Finely chop the gherkins.
  • Pick and finely chop the dill.
  • Finely chop the chives.
  • In a large mixing bowl, whisk the yogurt, mayonnaise, mustard, potato seasoning, and a pinch of salt and pepper until smooth.
  • Add the celery and gherkins to the dressing and mix to combine.
  • Add a handful of dill and chives, to taste (reserving some for garnish).
Serve

3 Serve

  • Once the potatoes are cooled, add them to the dressing and mix to coat well.
  • Top with the reserved dill and chives.
  • Serve the Creamy Herb New Potato Salad immediately or save for the barbecue later.
