Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Boil potatoes
Bring a pot of salted water to the boil.
Chop the potatoes (skins on) into bite-sized pieces.
Add to the pot and cook for 15-20 min or until tender.
Drain and set aside in the fridge to cool.
2 Make dressing
Meanwhile, thinly slice the celery.
Finely chop the gherkins.
Pick and finely chop the dill.
Finely chop the chives.
In a large mixing bowl, whisk the yogurt, mayonnaise, mustard, potatoseasoning, and a pinch of salt and pepper until smooth.
Add the celery and gherkins to the dressing and mix to combine.
Add a handful of dill and chives, to taste (reserving some for garnish).
3 Serve
Once the potatoes are cooled, add them to the dressing and mix to coat well.
Top with the reserved dill and chives.
Serve the Creamy Herb NewPotato Salad immediately or save for the barbecue later.
