Before you start

Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Make fries

1 Make fries

  • Preheat the oven to 200°C/180°C fan.
  • Slice the sweet potatoes (skins on) into fries.
  • Add the fries to a large baking tray with a drizzle of vegetable oil.
  • Sprinkle with a generous pinch of salt and toss.
  • Roast for 30-35 min or until golden and crisp.
Make slaw

2 Make slaw

  • Thinly shred the cabbage.
  • Peel and thinly slice or grate the carrot.
  • Thinly slice or grate the radish.
  • Pick the coriander leaves.
  • In a large bowl, combine the cabbage, carrot, radish and coriander.
  • Zest, then cut and juice lime into the bowl.
  • Add the vegan mayonnaise and a pinch of salt. Toss to combine.
Prep tofu

3 Prep tofu

  • Drain and slice the tofu horizontally into thick slices.
  • Pat dry each slice with paper towels.
  • In a bowl, mix the bbq spice, plain flour and almond milk together till smooth. This is your batter.
  • In a plate, combine the panko bread crumbs, with a pinch of salt and pepper.
  • Carefully, dunk each tofu slice in the batter, then press into the panko bread crumbs to coat both sides.
Tip! When coating the tofu in batter, using a fork will be less messy!
Fry tofu

4 Fry tofu

  • Heat a large non-stick pan over a medium-high heat with a generous drizzle of oil.
  • Add the breaded tofu (in batches), and fry for 3-4 min on each side or until golden and crispy.
  • Transfer to a plate, and reserve the frying pan.
Toast ciabatta

5 Toast ciabatta

  • Wipe the reserved frying pan, and heat to medium.
  • Slice open the ciabatta.
  • Toast the ciabatta in the pan till lightly golden brown.
  • Set aside.
Serve

6 Serve

  • Slice the gherkins.
  • Spread BBQ sauce on the toasted ciabatta halves.
  • Add a layer of gherkins on the bottom half.
  • Next, top with fried tofu slices.
  • Top with slaw.
  • Serve the Crispy BBQ Tofu Sandwich with a side of Sweet Potato Fries.
