Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Make fries
Preheat the oven to 200°C/180°C fan.
Slice the sweetpotatoes (skins on) into fries.
Add the fries to a large baking tray with a drizzle of vegetable oil.
Sprinkle with a generous pinch of salt and toss.
Roast for 30-35 min or until golden and crisp.
2 Make slaw
Thinly shred the cabbage.
Peel and thinly slice or grate the carrot.
Thinly slice or grate the radish.
Pick the corianderleaves.
In a large bowl, combine the cabbage, carrot, radish and coriander.
Zest, then cut and juice lime into the bowl.
Add the veganmayonnaise and a pinch of salt. Toss to combine.
3 Prep tofu
Drain and slice the tofu horizontally into thick slices.
Pat dry each slice with paper towels.
In a bowl, mix the bbqspice, plainflour and almondmilk together till smooth. This is your batter.
In a plate, combine the pankobreadcrumbs, with a pinch of salt and pepper.
Carefully, dunk each tofuslice in the batter, then press into the pankobreadcrumbs to coat both sides.
Tip!When coating the tofu in batter, using a fork will be less messy!
4 Fry tofu
Heat a large non-stick pan over a medium-high heat with a generous drizzle of oil.
Add the breaded tofu (in batches), and fry for 3-4 min on each side or until golden and crispy.
Transfer to a plate, and reserve the frying pan.
5 Toast ciabatta
Wipe the reserved frying pan, and heat to medium.
Slice open the ciabatta.
Toast the ciabatta in the pan till lightly golden brown.
Set aside.
6 Serve
Slice the gherkins.
Spread BBQsauce on the toasted ciabatta halves.
Add a layer of gherkins on the bottom half.
Next, top with friedtofuslices.
Top with slaw.
Serve the Crispy BBQTofu Sandwich with a side of SweetPotato Fries.
