Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Instructions

Roast fries

1 Roast fries

  • Preheat the oven to 220°C/200°C fan.
  • Chop the potatoes into fries.
  • Add the potatoes to a large bowl with the smoked paprika, potato seasoning and a drizzle of oil.
  • Toss to coat.
  • Transfer the fries to a lined baking tray and roast for 30-35 min until golden and crispy.
Prep chicken

2 Prep chicken

  • Meanwhile, slice the chicken into strips and add to a bowl with the 50g mayonnaise and a pinch of pepper.
  • Mix well to coat the chicken.
  • Crush the cornflakes and add to another bowl with the chicken seasoning and cajun spice.
  • Transfer the coated chicken to the cornflakes and coat, pressing firmly to adhere the cornflakes to the chicken.
  • Transfer the chicken to another lined baking tray.
Bake chicken

3 Bake chicken

  • Drizzle the chicken with a small amount of oil.
  • Bake the chicken for 18-20 min or until crispy and cooked through.
Make slaw

4 Make slaw

  • Meanwhile, shred both cabbages.
  • Peel and grate the carrot.
  • Cut the lime into wedges.
  • Add all the slaw ingredients to a bowl and mix with a squeeze of lime juice and a pinch of salt and pepper to taste.
Make sauce

5 Make sauce

  • In a small bowl, combine the remaining mayonnaise with the sriracha.
Serve

6 Serve

  • Slice the tomatoes and pick the lettuce leaves.
  • In a dry frying pan toast the buns until golden.
  • Assemble the burger with the sauce spread on both sides of the bun.
  • Serve the Crispy Cajun Chicken Burger with Fries and Limey Slaw.
