Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Roast tomatoes
Preheat the oven to 180°C/160°C fan.
Slice the tomatoes in half, and add to a shallow baking dish.
Drizzle over some olive oil, a good pinch of thyme (reserving the rest for breading the chicken), salt and pepper.
Roast for 25-30 min until they're blistered.
2 Prep chicken
Season the chickenbreast with a pinch of salt and pepper on both sides.
Place cling film on top of a chopping board and place the chickenbreasts on top, with another layer of cling film.
Using a rolling pin, bash the chicken breasts until almost halved in thickness.
3 Prep breading
To one plate, mix the flour, vegetableseasoning, garliconionpowder, remaining thyme, and a pinch of salt and pepper.
To a second plate, whisk the eggs with a pinch of salt and black pepper.
To a third plate, mix the pankobreadcrumbs with another pinch of salt and pepper.
One by one, coat both sides of the chickenbreasts in the seasoned flour, then the beaten egg and finally in the panko breadcrumbs.
Tip!Adding a pinch of salt and black pepper to the eggs, flour and panko ensures a well seasoned mix.
4 Fry chicken
Meanwhile, heat a good drizzle of oil in a large pan over a medium-high heat.
Fry the chicken for 4-5 min on each side or until crispy, golden brown, and cooked through.
Drain on kitchen paper to remove any excess oil.
Tip!If using an air fryer, preheat to 180°C. Add the breaded chicken to the basket with a drizzle or spray of oil. Air fry for 10-12 min before turning. Cook for another 3-5 min until crispy and cooked through. Do not crowd the basket and cook in batches.
5 Make salad and dressing
Peel and finely mince the garlic.
Slice the lemon into wedges.
Separate the lettuceleaves and cut into bite-sized pieces.
In a large bowl, mash the anchovies and garlic (to taste) into a paste.
Mix in the mayonnaise, capers, parmesan, and a good squeeze of lemon.
Add the lettuce to the bowl, and mix with the dressing right before serving.
Tip!Fussy kids? Leave out the anchovies and capers from the dressing.
6 Serve
Serve the Crispy Chicken Schnitzel topped high with the Caesar Salad and Roasted CherryTomatoes.
Serve with the wedges of lemon alongside.
