Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Prep date paste
Bring a kettle to the boil.
In a large bowl, add the date paste and boiled measured water.
Using a wooden spoon or fork, mash until the date paste becomes soft.
2 Add ingredients
Using a sharp knife, roughly chop the oats, or place in food processor and lightly blitz to break the oats (optional).
Roughly chop the pistachios and driedcranberries.
To the date paste, add the oats, vanilla essence, choppedpistachios, driedcranberries and a tiny pinch of salt.
Tip!For a nutty flavour, toast the oats in a dry hot pan over medium-high until golden brown and fragrant.
3 Combine
With a wooden spoon, combine the date mixture well.
It may be slightly sticky to the touch.
Tip!Alternatively place all ingredients in food processor and lightly blitz to bring the mixture together.
4 Shape
Using a tablespoon or small ice cream scoop, portion approximately 1.5 Tbsp of the date mixture and roll in between your palms.
Form into 14 golf ball-sized rounds or size of your choice.
Cover and place in the fridge to set for a minimum of 30 min (up to 2 hours).
5 Serve
Serve the Dateand Oat Energy Balls with Pistachio Nuts andDriedCranberries as a high-energy on-the-go snack.
Tip!Store the Energy Balls in an airtight container or ziplock bag in the fridge for up to one week or in the freezer for up to 3 months.
