Before you start
Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.
Instructions
1 Bake potatoes
Preheat the oven to 200°C/180°C fan.
Roughly chop the potatoes into bite-sized cubes.
Add them to a baking dish with a drizzle of oil and a generous pinch of salt.
Toss and bake for 15 min.
2 Prep
Meanwhile, peel and finely slice the redonion.
Separate the cauliflower into florets.
Chop them into smaller bite-sized pieces.
Chop the paneer into bite-sized cubes.
3 Prep
Boil the measuredwater and dissolve the 0.5 vegetablestockcube in it.
Add the coconutcream, currypowder, coriandercuminpowder, turmeric, a pinch of chillipowder(spicy!) and the gingergarlicpaste.
Mix well.
Set the currystock aside.
Finely chop the coriander leaves.
Tip!Sensitive to spice? Go easy on the chilli powder.
4 Bake
After 15 min, add the cauliflower and onion to the baking dish.
Bake for 15 min further or until the potatoes are tender.
5 Bake
Add the currystock and paneer.
Bake for 10 min further.
Add the babyspinach.
Mix through.
Bake for a final 5 min or until the spinach wilts.
6 Serve
Serve the Easy Tray Bake; Curried Paneer with Roasted Cauliflower and Potatoes.
Garnish with the coriander.
